Happy Labor Day, everyone! We hope you are all having a relaxing holiday.
We, on the other hand, are still working away — but to celebrate the holiday have another very special reader challenge for this week’s original cocktail!
If any of you out there have visited The Happiest Place On Earth, you have likely encountered these:
The glorious Dole Whip. Pineapple Juice mixed with pineapple soft serve. A delicious Disney treat for anyone who has schlepped around Fantasy Land for several hours.
We were challenged to create an alcoholic version of the classic theme park delicacy and so, without further ado, we give to you the Adult Dole Whip, AKA the Please Don’t Sue Us Disney We Really Like You And Mean No Harm With This Parody We Just Think That If The Parents Had Access To Liquor In The Park Things Would Be Much Better For Them.
So, we assume that the contents of the Disney Dole Whip are likely rather chemically enhanced in their nature, so we decided to get back to basics with our version. For the most part, that is…
For the Adult Dole Whip, you will need:
For the “soft serve” portion:
- 4 chopped chunks of pineapple
- 1 oz heavy whipping cream
- 1/2 oz lemon juice
- 1/2 oz lime juice
- 1/2 oz Grand Marnier
- 1/2 oz pisco
- 1 tspn superfine sugar
- approx 2-3 cups ice
For juice base:
- 2 oz pineapple juice
- 1 1/2 oz pisco
- 1 tspn superfine sugar
Also:
- canned whipped cream, for garnish
Two words of warning in advance: this is a labor-intensive recipe, and it requires a blender.
Grab your ingredients plus your blender, juice press, jiggers, cocktail shaker, and tall serving glass.
We recommend measuring and prepping the soft serve portion, then shaking the juice base, and then blending the soft serve. Understood?
So, measure out your pineapple chunks. We used pre-cut pieces purchased at the grocery store. Use about 4-6 pieces depending on size. Place those in your blender.
Now add in all of your fruit juices, and your 1 oz of heavy whipping cream.
Follow that up with your sugar.
Now add in your Grand Marnier and pisco.
Now top everything off with the ice. You want enough ice to create a thick, frozen consistency. Use about 2-3 cups.
Before you blend it, shake your juice base.
Measure out 2 oz of pineapple juice (canned is fine), plus your 1 1/2 oz of pisco and 1 tspn of sugar.
Add ice, shake, and then strain that base into your serving glass.
Now blend your soft serve ingredients until they reach that thick, frozen yogurt consistency.
Use a spoon to place spoonfuls of the soft serve into your serving glass on top of your juice base. The soft serve should be thick enough that it does not combine with the juice.
Now top it all off with a little whipped cream!
