Thursday Special: The PJ Harvey!

Now that you know how to make your traditional margarita, it’s time to get a little more creative. We here are huge fans of some heat, and love a good spicy cocktail. Thankfully, the margarita is a perfect drink to add a little burn to, and so we have done just that!

Come inside and learn all of the secrets of the PJ Harvey!

This drink, named for the MotherAtTheBar is a simple variation on a traditional margarita, you only need one extra ingredient, but the process of properly making it does involve a little more doing.

For the drink, you will need:

  • 1 oz lime juice
  • 1 tablespoon agave nectar
  • 1/2 oz triple sec
  • 1 1/2 oz tequila (preferably añejo)
  • 3-5 slices of a serrano chili pepper
  • Granulated salt (for the rim)
  • 1/4 lime wedge, to garnish

In an effort not to repeat ourselves, please see our traditional margarita recipe for the majority of the instructions here. You can do everything up to actually shaking the drink the same.

Once you have all of your ingredients except your serrano in the glass, carefully slice your pepper. You will want to use between 3 and 5 slices, depending on your heat preference. If you just want a hint, only use 2.

Serrano chilis are not to be trifled with, they are spicier than jalapeños, so prep accordingly. We prefer serranos over jalapeños for this drink because they have a richer flavor than the latter, and make for a more complex drink.

Also, make sure to be careful to thoroughly wash your hands and cutting board after you chop these peppers. DO NOT touch your face before you wash your hands, unless you are itching to know what it feels like to stick your face inside an open fire.

Add your serrano slices in with the rest of your ingredients, and then shake your drink normally.

THIS IS THE MOST IMPORTANT STEP, READ CAREFULLY! You MUST use both the traditional cocktail strainer as well as a mesh strainer to strain this drink into your glass. It is absolutely essential that you strain out the serrano seeds. If you leave those in the drink it will be burn-your-mouth-off-send-you-to-the-hospital hot. Be absolutely sure that you have strained these completely out, and again, thoroughly clean any instruments that you use when making one of these.

Now that you’ve handled that, add your lime wedge to the glass, and you are ready to go! We give you the PJ Harvey, everyone: a deliciously spicy, deliciously devilish drink.
